Fajita Quesadilla

Quick easy meal we love to enjoy ours topped with limes, pico, lettuce, and sour cream.

Ingredients
- (1.8 lbs) Boneless Chicken Breast
- (1 Pepper) Bell Pepper
- (1/4 Onion) Diced Onion
- (2 tbsp.) Fajita Seasoning
- (1 cup) Shredded Cheese
- (4 Tortillas) Medium Tortillas
- (2 Limes) Limes
Directions
- Rough chop your chicken, pepper, and onion.
- In a frying pan with some olive oil fry your chicken till cooked thru. Add your peppers and onions and let simmer till the veggies are soft.
- Fill half your tortilla with the meat and veggies and a 1/4 cup of cheese and fold in half.
- Toast each side on medium to low heat in a nonstick pan till the cheese is melted and the tortilla is crispy.
- Repeat for all the tortillas. Serve topped with your choice of veggies and condiments. (I listed our favorites above). Enjoy.
