Roasted Whole Chicken

Ingredients
- (1) Whole Chicken
- (2 tbsp.) Olive Oil
- (1) Juiced Lemon
- (1 tsp.) Salt
- (to taste) Stonemill table blend or Favorite Chicken Seasoning
Directions
Preheat your oven or grill to 250 degrees.
Prepare your chicken by patting it dry. Next I like to pull up the chicken skin over the breast with a table knife but don’t remove it.
Rub your oil all over the chicken and be sure the put a little of it in the pan you plan to put your chicken in.
Next squeeze the juice of your lemon over the chicken be sure to rub some under the skin directly onto the meat.
Sprinkle it all with salt and a generous amount of the seasoning you choose. Again be sure to get it under that skin.
Put it in your pan and slide that in your oven or grill. Let it bake for 3 hours and till your internal temp is 165 degrees.
Serve whole or pulled off the bone.
